Born and raised in Houston, Texas, Chef Courtney Lindsay discovered his passion for food at an early age in the kitchens of the women in his family. Those formative moments sparked a lifelong love of cooking, which he continued to nurture during his college years, where he religiously watched Food Network and eagerly tested recipes on friends and visitors.
After serving in the Army, Courtney took the bold step to formally refine his self-taught culinary skills by attending The Art Institute of Houston. During this time, he delved into catering for parties and brunches while perfecting his signature sauces—laying the foundation for his future culinary innovations.
In 2017, Courtney and his wife Chasitie embraced a vegan lifestyle, a decision that revolutionized his approach to food. Determined to make the transition enjoyable for his family, he began developing vegan dishes bursting with flavor and creativity. What started as a personal challenge blossomed into a culinary movement. Courtney introduced Houston to bold and flavorful vegan cuisine it had never experienced before.
His culinary journey included launching several successful food trucks that brought his unique take on vegan cuisine to communities across the city. While the food trucks and his vegan store have since closed, their influence helped establish Courtney as a pioneer in Houston’s culinary scene. Today, he continues to innovate as the founder of Sauce Co. Foods, a company offering a line of signature sauces that showcase his passion for bold, unforgettable flavors.
In addition to his success with Sauce Co. Foods, Courtney is the Executive Chef and co-owner of Mo' Brunch + Brews, a breakfast and brunch restaurant beloved for its unique and soulful approach to brunch culture. The restaurant has become a staple in Houston, drawing in both vegans and non-vegans with its innovative menu and warm, inviting atmosphere.
Chef Courtney’s groundbreaking contributions to vegan cuisine have earned him numerous awards and recognition as a trailblazer in Houston. From his vibrant food creations to his community-centered initiatives, he’s leaving a lasting impact on the city and beyond. His talents have been showcased nationally on Food Network’s Alex vs America “No Meat Challenge” episode and Chopped, where his creativity and expertise shone on a competitive stage.
